Ingredients

6 corn tortillas
1 1/2 cups shredded Oaxaca cheese or mozzarella
1 medium onion, thinly sliced
1 jalapeño, sliced (optional)
1 tablespoon vegetable oil
1 tablespoon butter
salt to taste
fresh cilantro, chopped (optional)

Instructions

  1. 1 Heat the vegetable oil in a skillet over medium heat.
  2. 2 Add the sliced onion and jalapeño to the skillet, cooking until the onion is soft and translucent, about 5 minutes. Season with salt to taste.
  3. 3 Remove the onion and jalapeño mixture from the skillet and set aside.
  4. 4 Wipe the skillet clean and return to medium heat. Add a small amount of butter.
  5. 5 Place a tortilla in the skillet and sprinkle a layer of cheese over half of the tortilla.
  6. 6 Add a portion of the onion and jalapeño mixture on top of the cheese.
  7. 7 Fold the tortilla in half and press gently with a spatula.
  8. 8 Cook for 2-3 minutes on each side, or until the cheese is melted and the tortilla is golden brown.
  9. 9 Repeat with the remaining tortillas and filling.
  10. 10 Cut each quesadilla into wedges and serve hot, garnished with fresh cilantro if desired.

Tips

For a more authentic flavor, use Oaxaca cheese. You can also add cooked chicken or mushrooms for a heartier filling.
