Ingredients
| 6 | corn tortillas |
| 1 1/2 cups | shredded Oaxaca cheese or mozzarella |
| 1 | medium onion, thinly sliced |
| 1 | jalapeño, sliced (optional) |
| 1 tablespoon | vegetable oil |
| 1 tablespoon | butter |
| — | salt to taste |
| — | fresh cilantro, chopped (optional) |
Instructions
- 1 Heat the vegetable oil in a skillet over medium heat.
- 2 Add the sliced onion and jalapeño to the skillet, cooking until the onion is soft and translucent, about 5 minutes. Season with salt to taste.
- 3 Remove the onion and jalapeño mixture from the skillet and set aside.
- 4 Wipe the skillet clean and return to medium heat. Add a small amount of butter.
- 5 Place a tortilla in the skillet and sprinkle a layer of cheese over half of the tortilla.
- 6 Add a portion of the onion and jalapeño mixture on top of the cheese.
- 7 Fold the tortilla in half and press gently with a spatula.
- 8 Cook for 2-3 minutes on each side, or until the cheese is melted and the tortilla is golden brown.
- 9 Repeat with the remaining tortillas and filling.
- 10 Cut each quesadilla into wedges and serve hot, garnished with fresh cilantro if desired.
Tips
For a more authentic flavor, use Oaxaca cheese. You can also add cooked chicken or mushrooms for a heartier filling.
