Ingredients

1 cup ragi flour
1/2 cup rice flour
1/4 cup urad dal
1/4 cup poha (flattened rice)
1 cup water
salt to taste
1 teaspoon cumin seeds
1 teaspoon finely chopped ginger
2 tablespoons finely chopped onions
2 tablespoons finely chopped coriander leaves
1 tablespoon oil for cooking

Instructions

  1. 1 Wash and soak the urad dal and poha together in water for 2-3 hours.
  2. 2 Drain the soaked urad dal and poha, then grind them into a smooth paste using a little water.
  3. 3 In a large mixing bowl, combine the ragi flour, rice flour, and the urad dal-poha paste.
  4. 4 Add water gradually to the mixture, stirring continuously to make a smooth batter.
  5. 5 Add salt, cumin seeds, chopped ginger, onions, and coriander leaves to the batter and mix well.
  6. 6 Heat a non-stick dosa pan or tawa on medium heat and grease it lightly with oil.
  7. 7 Pour a ladleful of batter onto the pan and spread it in a circular motion to form a thin dosa.
  8. 8 Drizzle a little oil around the edges of the dosa and cook until the edges start to lift and the dosa turns golden brown.
  9. 9 Flip the dosa and cook for another minute on the other side.
  10. 10 Remove the dosa from the pan and repeat with the remaining batter.
  11. 11 Serve hot with coconut chutney or sambar.

Tips

For a crispier dosa, let the batter ferment for a few hours before making the dosas.
