Ingredients
| 1 cup | ragi flour |
| 1/2 cup | rice flour |
| 1/4 cup | urad dal |
| 1/4 cup | poha (flattened rice) |
| 1 cup | water |
| — | salt to taste |
| 1 teaspoon | cumin seeds |
| 1 teaspoon | finely chopped ginger |
| 2 tablespoons | finely chopped onions |
| 2 tablespoons | finely chopped coriander leaves |
| 1 tablespoon | oil for cooking |
Instructions
- 1 Wash and soak the urad dal and poha together in water for 2-3 hours.
- 2 Drain the soaked urad dal and poha, then grind them into a smooth paste using a little water.
- 3 In a large mixing bowl, combine the ragi flour, rice flour, and the urad dal-poha paste.
- 4 Add water gradually to the mixture, stirring continuously to make a smooth batter.
- 5 Add salt, cumin seeds, chopped ginger, onions, and coriander leaves to the batter and mix well.
- 6 Heat a non-stick dosa pan or tawa on medium heat and grease it lightly with oil.
- 7 Pour a ladleful of batter onto the pan and spread it in a circular motion to form a thin dosa.
- 8 Drizzle a little oil around the edges of the dosa and cook until the edges start to lift and the dosa turns golden brown.
- 9 Flip the dosa and cook for another minute on the other side.
- 10 Remove the dosa from the pan and repeat with the remaining batter.
- 11 Serve hot with coconut chutney or sambar.
Tips
For a crispier dosa, let the batter ferment for a few hours before making the dosas.
