Ingredients
| 1/2 cup | rajgira (amaranth) seeds |
| 3 cups | milk |
| 1/4 cup | sugar |
| 1/4 teaspoon | cardamom powder |
| 2 tablespoons | ghee |
| 2 tablespoons | cashew nuts |
| 2 tablespoons | raisins |
| 1 tablespoon | almonds, sliced |
Instructions
- 1 Heat ghee in a pan over medium heat.
- 2 Add cashew nuts and almonds, and fry until golden brown. Remove and set aside.
- 3 In the same ghee, add rajgira seeds and roast for 2-3 minutes until aromatic.
- 4 Pour in the milk and bring to a boil, stirring occasionally.
- 5 Reduce the heat to low and let it simmer until the rajgira is cooked and the mixture thickens, about 15-20 minutes.
- 6 Add sugar and cardamom powder, and stir well.
- 7 Cook for another 5 minutes until the sugar is completely dissolved.
- 8 Garnish with fried cashew nuts, almonds, and raisins before serving.
Tips
Ensure the milk does not stick to the bottom by stirring occasionally. Adjust the sugar to taste.
