Ingredients

1/2 cup rajgira (amaranth) seeds
3 cups milk
1/4 cup sugar
1/4 teaspoon cardamom powder
2 tablespoons ghee
2 tablespoons cashew nuts
2 tablespoons raisins
1 tablespoon almonds, sliced

Instructions

  1. 1 Heat ghee in a pan over medium heat.
  2. 2 Add cashew nuts and almonds, and fry until golden brown. Remove and set aside.
  3. 3 In the same ghee, add rajgira seeds and roast for 2-3 minutes until aromatic.
  4. 4 Pour in the milk and bring to a boil, stirring occasionally.
  5. 5 Reduce the heat to low and let it simmer until the rajgira is cooked and the mixture thickens, about 15-20 minutes.
  6. 6 Add sugar and cardamom powder, and stir well.
  7. 7 Cook for another 5 minutes until the sugar is completely dissolved.
  8. 8 Garnish with fried cashew nuts, almonds, and raisins before serving.

Tips

Ensure the milk does not stick to the bottom by stirring occasionally. Adjust the sugar to taste.
