Ingredients

1 cup urad dal
1 cup water
1 teaspoon cumin seeds
1 teaspoon red chili powder
1 teaspoon turmeric powder
1 teaspoon coriander powder
1 teaspoon salt
2 tablespoons mustard oil
1 cup chopped onions
1 cup chopped tomatoes
1 cup chopped spinach
1 tablespoon ginger-garlic paste

Instructions

  1. 1 Wash and soak the urad dal in water for 4 hours.
  2. 2 Drain the water and grind the soaked dal into a coarse paste.
  3. 3 In a mixing bowl, combine the dal paste with cumin seeds, red chili powder, turmeric powder, coriander powder, and salt.
  4. 4 Heat mustard oil in a pan over medium heat.
  5. 5 Add chopped onions and sauté until they turn golden brown.
  6. 6 Stir in the ginger-garlic paste and sauté for another minute.
  7. 7 Add chopped tomatoes and cook until they become soft and mushy.
  8. 8 Mix in the chopped spinach and cook until the spinach wilts.
  9. 9 Add the dal mixture to the pan and stir well to combine with the vegetables.
  10. 10 Cook the mixture on low heat, stirring occasionally, until the dal is cooked and the mixture thickens.
  11. 11 Serve hot with rice or roti.

Tips

For a richer flavor, you can add a pinch of asafoetida while sautéing the onions.
