Ingredients
| 1 cup | urad dal |
| 1 cup | water |
| 1 teaspoon | cumin seeds |
| 1 teaspoon | red chili powder |
| 1 teaspoon | turmeric powder |
| 1 teaspoon | coriander powder |
| 1 teaspoon | salt |
| 2 tablespoons | mustard oil |
| 1 cup | chopped onions |
| 1 cup | chopped tomatoes |
| 1 cup | chopped spinach |
| 1 tablespoon | ginger-garlic paste |
Instructions
- 1 Wash and soak the urad dal in water for 4 hours.
- 2 Drain the water and grind the soaked dal into a coarse paste.
- 3 In a mixing bowl, combine the dal paste with cumin seeds, red chili powder, turmeric powder, coriander powder, and salt.
- 4 Heat mustard oil in a pan over medium heat.
- 5 Add chopped onions and sauté until they turn golden brown.
- 6 Stir in the ginger-garlic paste and sauté for another minute.
- 7 Add chopped tomatoes and cook until they become soft and mushy.
- 8 Mix in the chopped spinach and cook until the spinach wilts.
- 9 Add the dal mixture to the pan and stir well to combine with the vegetables.
- 10 Cook the mixture on low heat, stirring occasionally, until the dal is cooked and the mixture thickens.
- 11 Serve hot with rice or roti.
Tips
For a richer flavor, you can add a pinch of asafoetida while sautéing the onions.
