Ingredients
| 1 liter | full cream milk |
| 1 cup | paneer (cottage cheese) |
| 2 tablespoons | semolina |
| 1/2 cup | sugar |
| 1/4 teaspoon | cardamom powder |
| 1 tablespoon | rose water |
| 1 pinch | saffron strands |
| as needed | ghee for frying |
| as needed | Chopped pistachios for garnish |
Instructions
- 1 Boil the milk in a heavy-bottomed pan and reduce it to half its original volume, stirring occasionally.
- 2 While the milk is boiling, knead the paneer with semolina until smooth and soft.
- 3 Divide the paneer mixture into small balls and flatten them slightly to form discs.
- 4 Heat ghee in a pan and fry the paneer discs on medium heat until they turn golden brown. Set aside.
- 5 Add sugar, cardamom powder, rose water, and saffron strands to the reduced milk and stir well.
- 6 Carefully add the fried paneer discs to the milk and simmer for 5-7 minutes, allowing them to absorb the flavors.
- 7 Remove from heat and let it cool. Garnish with chopped pistachios before serving.
Tips
For a richer taste, use fresh homemade paneer.
