Ingredients

basmati rice 1 cup Basmati rice
water 4 cups Water
jaggery 1 cup Jaggery
Milk 1 cup Milk , full-fat
cardamom 1/4 teaspoon Cardamom , powder
ghee 2 tablespoons Ghee
Cashew 1 tablespoon Cashew , nuts
Raisin 1 tablespoon Raisin
salt 1 pinch Salt

Instructions

  1. 1 Wash and soak the basmati rice for 20 minutes.
  2. 2 In a pot, bring 4 cups of water to a boil.
  3. 3 Add the soaked rice and a pinch of salt to the boiling water.
  4. 4 Cook the rice on medium heat until it is 90% cooked, then drain any excess water.
  5. 5 In another pan, heat the ghee and fry the cashew nuts and raisins until golden brown. Set aside.
  6. 6 In the same pan, add the milk and bring it to a boil.
  7. 7 Add the cooked rice to the boiling milk and mix well.
  8. 8 Add the jaggery and stir continuously until it dissolves completely.
  9. 9 Add the cardamom powder and mix well.
  10. 10 Cook on low heat until the mixture thickens to your desired consistency.
  11. 11 Garnish with the fried cashew nuts and raisins before serving.

Tips

For a richer taste, you can add a few strands of saffron soaked in warm milk.
