Ingredients
| 1 cup | basmati rice |
| 4 cups | water |
| 1 cup | jaggery |
| 1 cup | milk |
| 1/4 teaspoon | cardamom powder |
| 2 tablespoons | ghee |
| 1 tablespoon | cashew nuts |
| 1 tablespoon | raisins |
| 1 pinch | salt |
Instructions
- 1 Wash and soak the basmati rice for 20 minutes.
- 2 In a pot, bring 4 cups of water to a boil.
- 3 Add the soaked rice and a pinch of salt to the boiling water.
- 4 Cook the rice on medium heat until it is 90% cooked, then drain any excess water.
- 5 In another pan, heat the ghee and fry the cashew nuts and raisins until golden brown. Set aside.
- 6 In the same pan, add the milk and bring it to a boil.
- 7 Add the cooked rice to the boiling milk and mix well.
- 8 Add the jaggery and stir continuously until it dissolves completely.
- 9 Add the cardamom powder and mix well.
- 10 Cook on low heat until the mixture thickens to your desired consistency.
- 11 Garnish with the fried cashew nuts and raisins before serving.
Tips
For a richer taste, you can add a few strands of saffron soaked in warm milk.
