Ingredients

1 cup semolina (sooji/ravva)
3/4 cup sugar
2 tablespoons ghee
2 1/2 cups water
1/4 teaspoon cardamom powder
8-10 cashew nuts
8-10 raisins
a pinch saffron strands
a pinch orange food color (optional)

Instructions

  1. 1 Heat 1 tablespoon of ghee in a pan over medium heat.
  2. 2 Add cashew nuts and fry until golden brown, then add raisins and fry until they puff up. Remove and set aside.
  3. 3 In the same pan, add semolina and roast on low heat until it turns aromatic and light golden. Set aside.
  4. 4 In a separate pot, bring water to a boil. Add saffron strands and food color if using.
  5. 5 Gradually add the roasted semolina to the boiling water, stirring continuously to avoid lumps.
  6. 6 Cover and cook on low heat until the semolina absorbs the water and is cooked through.
  7. 7 Add sugar and mix well until it dissolves completely.
  8. 8 Stir in the remaining ghee, cardamom powder, fried cashew nuts, and raisins.
  9. 9 Cook for another 2-3 minutes, stirring occasionally, until the mixture leaves the sides of the pan.
  10. 10 Serve warm.

Tips

For a richer taste, increase the amount of ghee slightly and use a mix of water and milk.
