Ingredients
| 1 cup | semolina (sooji/ravva) |
| 3/4 cup | sugar |
| 2 tablespoons | ghee |
| 2 1/2 cups | water |
| 1/4 teaspoon | cardamom powder |
| 8-10 | cashew nuts |
| 8-10 | raisins |
| a pinch | saffron strands |
| a pinch | orange food color (optional) |
Instructions
- 1 Heat 1 tablespoon of ghee in a pan over medium heat.
- 2 Add cashew nuts and fry until golden brown, then add raisins and fry until they puff up. Remove and set aside.
- 3 In the same pan, add semolina and roast on low heat until it turns aromatic and light golden. Set aside.
- 4 In a separate pot, bring water to a boil. Add saffron strands and food color if using.
- 5 Gradually add the roasted semolina to the boiling water, stirring continuously to avoid lumps.
- 6 Cover and cook on low heat until the semolina absorbs the water and is cooked through.
- 7 Add sugar and mix well until it dissolves completely.
- 8 Stir in the remaining ghee, cardamom powder, fried cashew nuts, and raisins.
- 9 Cook for another 2-3 minutes, stirring occasionally, until the mixture leaves the sides of the pan.
- 10 Serve warm.
Tips
For a richer taste, increase the amount of ghee slightly and use a mix of water and milk.
