Ingredients

2 cups rice (preferably ukda rice or any parboiled rice)
1 cup water
salt to taste
1 teaspoon oil

Instructions

  1. 1 Wash the rice thoroughly and soak it in water for 4-5 hours or overnight.
  2. 2 Drain the soaked rice and grind it into a smooth batter using a little water.
  3. 3 Add salt to taste and mix the batter well.
  4. 4 Heat a non-stick pan or a cast iron tawa on medium heat.
  5. 5 Grease the pan with a little oil to prevent sticking.
  6. 6 Pour a ladleful of batter onto the pan and spread it gently to form a thick pancake.
  7. 7 Cover the pan with a lid and cook on low heat for about 2-3 minutes.
  8. 8 Flip the bhakri and cook the other side for another 2-3 minutes until both sides are cooked and slightly golden.
  9. 9 Repeat with the remaining batter.
  10. 10 Serve hot with coconut chutney or any curry of your choice.

Tips

Ensure the batter is not too thin; it should be of pouring consistency but thick enough to hold shape on the pan.
