Ingredients
| 1 cup | all-purpose flour |
| 1 cup | coconut milk |
| 1 cup | water |
| 1 large | egg |
| 1/2 teaspoon | salt |
| 1 tablespoon | vegetable oil |
| 1 teaspoon | turmeric powder |
| — | vegetable oil for greasing the pan |
Instructions
- 1 In a large mixing bowl, combine the flour, coconut milk, water, egg, salt, vegetable oil, and turmeric powder.
- 2 Whisk the ingredients together until a smooth batter forms. Strain the batter to remove any lumps.
- 3 Heat a non-stick pan over medium heat and lightly grease it with vegetable oil.
- 4 Fill a roti jala mold or a squeeze bottle with the batter.
- 5 Hold the mold or bottle over the pan and quickly drizzle the batter in a circular motion to form a lace-like pattern.
- 6 Cook the roti jala for about 1-2 minutes until set, then gently fold it into quarters or roll it up.
- 7 Repeat the process with the remaining batter, greasing the pan as needed.
- 8 Serve the roti jala warm with your choice of curry.
Tips
Ensure the batter is smooth for even lacy patterns. Adjust the thickness with water if necessary.
