Ingredients

1 cup semolina (rava)
2 tablespoons ghee
1 cup sugar
2 cups water
1/4 teaspoon cardamom powder
10-12 cashew nuts
10-12 raisins
1 pinch saffron strands
1 pinch salt

Instructions

  1. 1 Heat ghee in a pan and roast the cashew nuts and raisins until golden. Remove and set aside.
  2. 2 In the same pan, add semolina and roast on low flame until it turns aromatic and light golden. Remove from heat.
  3. 3 In a separate pot, bring water to a boil.
  4. 4 Add sugar, cardamom powder, saffron strands, and a pinch of salt to the boiling water. Stir until the sugar dissolves completely.
  5. 5 Gradually add the roasted semolina to the boiling sugar syrup, stirring continuously to avoid lumps.
  6. 6 Cook on low flame until the semolina absorbs all the water and thickens.
  7. 7 Add the roasted cashew nuts and raisins to the mixture and mix well.
  8. 8 Cover and let it rest for a few minutes before serving.

Tips

For a richer taste, you can add a little more ghee while cooking.
