Ingredients
| 1 cup | samak rice |
| 1/2 cup | split yellow moong dal |
| 2 tablespoons | ghee |
| 1 teaspoon | cumin seeds |
| 1 teaspoon | ginger paste |
| 1 teaspoon | turmeric powder |
| 1 teaspoon | coriander powder |
| 1 teaspoon | red chili powder |
| — | salt to taste |
| 3 cups | water |
| 2 tablespoons | chopped cilantro |
| 1 tablespoon | lemon juice |
Instructions
- 1 Wash and soak the samak rice and moong dal together for 20 minutes.
- 2 Heat ghee in a pressure cooker over medium heat.
- 3 Add cumin seeds and let them splutter.
- 4 Add ginger paste and sauté for a minute.
- 5 Add turmeric powder, coriander powder, and red chili powder, and sauté for another minute.
- 6 Drain the soaked rice and dal and add them to the cooker.
- 7 Stir well to coat the rice and dal with the spices.
- 8 Add water and salt to taste, and mix well.
- 9 Close the pressure cooker lid and cook on medium heat for 2 whistles.
- 10 Allow the pressure to release naturally.
- 11 Open the lid and fluff the khichdi with a fork.
- 12 Garnish with chopped cilantro and drizzle with lemon juice before serving.
Tips
For a richer taste, add a handful of roasted peanuts or cashews before serving.
