Ingredients

1 cup samak rice
1/2 cup split yellow moong dal
2 tablespoons ghee
1 teaspoon cumin seeds
1 teaspoon ginger paste
1 teaspoon turmeric powder
1 teaspoon coriander powder
1 teaspoon red chili powder
salt to taste
3 cups water
2 tablespoons chopped cilantro
1 tablespoon lemon juice

Instructions

  1. 1 Wash and soak the samak rice and moong dal together for 20 minutes.
  2. 2 Heat ghee in a pressure cooker over medium heat.
  3. 3 Add cumin seeds and let them splutter.
  4. 4 Add ginger paste and sauté for a minute.
  5. 5 Add turmeric powder, coriander powder, and red chili powder, and sauté for another minute.
  6. 6 Drain the soaked rice and dal and add them to the cooker.
  7. 7 Stir well to coat the rice and dal with the spices.
  8. 8 Add water and salt to taste, and mix well.
  9. 9 Close the pressure cooker lid and cook on medium heat for 2 whistles.
  10. 10 Allow the pressure to release naturally.
  11. 11 Open the lid and fluff the khichdi with a fork.
  12. 12 Garnish with chopped cilantro and drizzle with lemon juice before serving.

Tips

For a richer taste, add a handful of roasted peanuts or cashews before serving.
