Ingredients
| 8 pieces | red chili peppers |
| 3 cloves | garlic |
| 3 pieces | shallots |
| 1 tablespoon | tamarind paste |
| 1 teaspoon | salt |
| 1 teaspoon | sugar |
| 2 tablespoons | vegetable oil |
| — | lime juice to taste |
Instructions
- 1 Remove the stems from the red chili peppers and roughly chop them.
- 2 Peel the garlic and shallots, then roughly chop them.
- 3 In a blender or mortar and pestle, combine the chopped chili peppers, garlic, and shallots.
- 4 Add the tamarind paste, salt, and sugar to the mixture.
- 5 Grind or blend the ingredients into a coarse paste.
- 6 Heat the vegetable oil in a pan over medium heat.
- 7 Add the chili paste to the pan and sauté for about 5-7 minutes, stirring occasionally.
- 8 Remove from heat and let it cool slightly.
- 9 Adjust seasoning with lime juice to taste before serving.
Tips
For a milder sambal, remove the seeds from the chili peppers before blending.
