Ingredients

8 pieces red chili peppers
3 cloves garlic
3 pieces shallots
1 tablespoon tamarind paste
1 teaspoon salt
1 teaspoon sugar
2 tablespoons vegetable oil
lime juice to taste

Instructions

  1. 1 Remove the stems from the red chili peppers and roughly chop them.
  2. 2 Peel the garlic and shallots, then roughly chop them.
  3. 3 In a blender or mortar and pestle, combine the chopped chili peppers, garlic, and shallots.
  4. 4 Add the tamarind paste, salt, and sugar to the mixture.
  5. 5 Grind or blend the ingredients into a coarse paste.
  6. 6 Heat the vegetable oil in a pan over medium heat.
  7. 7 Add the chili paste to the pan and sauté for about 5-7 minutes, stirring occasionally.
  8. 8 Remove from heat and let it cool slightly.
  9. 9 Adjust seasoning with lime juice to taste before serving.

Tips

For a milder sambal, remove the seeds from the chili peppers before blending.
