Ingredients
| 2 large | oranges |
| 1 cup | semolina (rava) |
| 1 cup | sugar |
| 1 cup | milk |
| 2 tablespoons | ghee |
| 1 teaspoon | baking powder |
| 1 teaspoon | cardamom powder |
| 1 pinch | salt |
| 1 teaspoon | orange zest |
| 1 tablespoon | chopped nuts (optional) |
Instructions
- 1 Peel the oranges and separate the segments, removing seeds if any.
- 2 Blend the orange segments into a smooth puree and set aside.
- 3 In a mixing bowl, combine semolina, sugar, milk, and ghee. Mix well.
- 4 Add the orange puree, baking powder, cardamom powder, salt, and orange zest to the semolina mixture. Stir until well combined.
- 5 Let the mixture rest for 15-20 minutes to allow the semolina to absorb the liquid.
- 6 Grease a non-stick pan with ghee and preheat it on low flame.
- 7 Pour the batter into the pan and spread it evenly.
- 8 Cover the pan with a lid and cook on low flame for 20-25 minutes or until the top is set and the edges start to leave the pan.
- 9 Check with a toothpick; if it comes out clean, the Santra Pola is ready.
- 10 Let it cool slightly before flipping it onto a plate.
- 11 Garnish with chopped nuts if using, slice, and serve warm.
Tips
Ensure the flame is low while cooking to prevent burning. You can add a few saffron strands for extra aroma and color.
