Ingredients

2 tablespoons vegetable oil
1 medium onion, finely chopped
1 medium tomato, finely chopped
1 teaspoon cumin seeds
1 teaspoon mustard seeds
1 teaspoon turmeric powder
1 teaspoon red chili powder
1 teaspoon coriander powder
1 green chili, finely chopped
2 cups mixed vegetables (such as potatoes, peas, carrots), chopped
1 cup fresh cilantro, chopped
salt to taste
1 cup water

Instructions

  1. 1 Heat oil in a pan over medium heat.
  2. 2 Add cumin seeds and mustard seeds, and let them splutter.
  3. 3 Add chopped onion and sauté until golden brown.
  4. 4 Stir in the chopped tomato and cook until soft.
  5. 5 Add turmeric powder, red chili powder, coriander powder, and chopped green chili. Mix well.
  6. 6 Add the mixed vegetables and stir to coat them with the spices.
  7. 7 Pour in the water, add salt to taste, and cover the pan.
  8. 8 Cook on low heat until the vegetables are tender and the water is absorbed.
  9. 9 Garnish with chopped cilantro before serving.

Tips

For added flavor, you can include a pinch of garam masala at the end of cooking.
