Ingredients

| 1 | medium onion, finely chopped |
| 1 | medium tomato, finely chopped |
| 1 teaspoon | cumin seeds |
| 1 teaspoon | mustard seeds |
| 1 teaspoon | turmeric powder |
| 1 teaspoon | red chili powder |
| 1 teaspoon | coriander powder |
| 1 | green chili, finely chopped |
| 2 cups | mixed vegetables (such as potatoes, peas, carrots), chopped |
| 1 cup | fresh cilantro, chopped |
| — | salt to taste |
| 1 cup | water |
Instructions
- 1 Heat oil in a pan over medium heat.
- 2 Add cumin seeds and mustard seeds, and let them splutter.
- 3 Add chopped onion and sauté until golden brown.
- 4 Stir in the chopped tomato and cook until soft.
- 5 Add turmeric powder, red chili powder, coriander powder, and chopped green chili. Mix well.
- 6 Add the mixed vegetables and stir to coat them with the spices.
- 7 Pour in the water, add salt to taste, and cover the pan.
- 8 Cook on low heat until the vegetables are tender and the water is absorbed.
- 9 Garnish with chopped cilantro before serving.
Tips
For added flavor, you can include a pinch of garam masala at the end of cooking.
