Ingredients

1 cup all-purpose flour
1 cup semolina
1/2 cup sugar
1/4 cup ghee
1/4 teaspoon cardamom powder
1/4 teaspoon salt
1/4 cup milk
oil for deep frying

Instructions

  1. 1 In a mixing bowl, combine the all-purpose flour, semolina, sugar, cardamom powder, and salt.
  2. 2 Heat the ghee until it melts and add it to the dry ingredients. Mix well.
  3. 3 Gradually add milk to the mixture and knead to form a firm dough.
  4. 4 Cover the dough and let it rest for 15 minutes.
  5. 5 Divide the dough into small portions and roll each portion into a thin circle.
  6. 6 Using a knife or a cutter, cut the rolled dough into diamond or square shapes.
  7. 7 Heat oil in a deep frying pan over medium heat.
  8. 8 Once the oil is hot, gently slide in the cut pieces and fry them until they turn golden brown.
  9. 9 Remove the fried shankarpali with a slotted spoon and drain on paper towels.
  10. 10 Allow them to cool completely before serving or storing.

Tips

Ensure the oil is not too hot to avoid burning the shankarpali. Fry in small batches for even cooking.
