Ingredients
| 1 cup | all-purpose flour |
| 1 cup | semolina |
| 1/2 cup | sugar |
| 1/4 cup | ghee |
| 1/4 teaspoon | cardamom powder |
| 1/4 teaspoon | salt |
| 1/4 cup | milk |
| — | oil for deep frying |
Instructions
- 1 In a mixing bowl, combine the all-purpose flour, semolina, sugar, cardamom powder, and salt.
- 2 Heat the ghee until it melts and add it to the dry ingredients. Mix well.
- 3 Gradually add milk to the mixture and knead to form a firm dough.
- 4 Cover the dough and let it rest for 15 minutes.
- 5 Divide the dough into small portions and roll each portion into a thin circle.
- 6 Using a knife or a cutter, cut the rolled dough into diamond or square shapes.
- 7 Heat oil in a deep frying pan over medium heat.
- 8 Once the oil is hot, gently slide in the cut pieces and fry them until they turn golden brown.
- 9 Remove the fried shankarpali with a slotted spoon and drain on paper towels.
- 10 Allow them to cool completely before serving or storing.
Tips
Ensure the oil is not too hot to avoid burning the shankarpali. Fry in small batches for even cooking.
