Ingredients
| 1/4 cup | vermicelli |
| 2 tablespoons | ghee |
| 3 cups | whole milk |
| 1/4 cup | sugar |
| 1/4 teaspoon | cardamom powder |
| 2 tablespoons | chopped almonds |
| 2 tablespoons | chopped cashews |
| 2 tablespoons | chopped pistachios |
| 2 tablespoons | raisins |
| 1 tablespoon | chironji |
| 2 tablespoons | dried dates, chopped |
| 1 pinch | saffron strands |
| — | rose water (optional) |
Instructions
- 1 Heat ghee in a pan over medium heat.
- 2 Add vermicelli and roast until golden brown, then set aside.
- 3 In the same pan, add chopped almonds, cashews, pistachios, chironji, and raisins. Roast until fragrant and set aside.
- 4 In a large pot, bring the milk to a boil.
- 5 Reduce the heat and let it simmer until it thickens slightly, stirring occasionally.
- 6 Add the roasted vermicelli to the milk and cook until it softens.
- 7 Stir in the sugar and cardamom powder.
- 8 Add the roasted nuts, raisins, and chopped dates to the milk mixture.
- 9 Add saffron strands and let them infuse into the milk.
- 10 Simmer for a few more minutes until the mixture thickens to your desired consistency.
- 11 Remove from heat and add a splash of rose water if using.
- 12 Serve warm or chilled, garnished with additional nuts if desired.
Tips
For a richer flavor, use full-fat milk and let the sheer khurma sit for a few hours before serving to allow the flavors to meld.
