Ingredients

1 cup cucumber, finely diced
1 cup tomato, finely diced
0.5 cup red onion, finely diced
2 tablespoons fresh lime juice
2 tablespoons extra virgin olive oil
salt to taste
black pepper to taste
1 tablespoon fresh mint, chopped
1 tablespoon fresh parsley, chopped

Instructions

  1. 1 In a large bowl, combine the diced cucumber, tomato, and red onion.
  2. 2 In a small bowl, whisk together the lime juice, olive oil, salt, and black pepper.
  3. 3 Pour the dressing over the vegetables and toss to combine.
  4. 4 Add the chopped mint and parsley to the salad and gently mix.
  5. 5 Taste and adjust seasoning if necessary.
  6. 6 Chill the salad in the refrigerator for at least 15 minutes before serving.
