Ingredients
| 1 cup | cucumber, finely diced |
| 1 cup | tomato, finely diced |
| 0.5 cup | red onion, finely diced |
| 2 tablespoons | fresh lime juice |
| 2 tablespoons | extra virgin olive oil |

| 1 tablespoon | fresh mint, chopped |
| 1 tablespoon | fresh parsley, chopped |
Instructions
- 1 In a large bowl, combine the diced cucumber, tomato, and red onion.
- 2 In a small bowl, whisk together the lime juice, olive oil, salt, and black pepper.
- 3 Pour the dressing over the vegetables and toss to combine.
- 4 Add the chopped mint and parsley to the salad and gently mix.
- 5 Taste and adjust seasoning if necessary.
- 6 Chill the salad in the refrigerator for at least 15 minutes before serving.
Tips
For best results, use fresh and firm vegetables. Adjust lime juice to taste for desired tanginess.
