Ingredients

1 cup singhada (water chestnut) flour
1/2 cup ghee
1 cup sugar
2 cups water
1/4 teaspoon cardamom powder
2 tablespoons chopped almonds
2 tablespoons chopped cashews
2 tablespoons raisins

Instructions

  1. 1 Heat the ghee in a heavy-bottomed pan over medium heat.
  2. 2 Add the singhada flour to the pan and roast it in the ghee, stirring continuously, until it turns golden brown and releases a nutty aroma.
  3. 3 In a separate pot, bring the water to a boil and add the sugar, stirring until it dissolves completely.
  4. 4 Gradually add the sugar syrup to the roasted singhada flour, stirring continuously to avoid lumps.
  5. 5 Cook the mixture on low heat, stirring constantly, until it thickens and starts to leave the sides of the pan.
  6. 6 Add the cardamom powder, chopped almonds, cashews, and raisins to the halwa. Mix well.
  7. 7 Cook for another 2-3 minutes, then remove from heat.
  8. 8 Serve the halwa warm, garnished with additional nuts if desired.

Tips

Roast the singhada flour patiently on medium heat to enhance its flavor and aroma.
