Garhwali rice flour festival fritters — rice flour batter seasoned with sugar, cardamom, and a pinch of salt, piped or shaped through a mould into pretzel-like loops or spiral shapes directly into hot oil and fried until crunchy, golden, and very light. Similar to jalebi in being a fried batter shape but without the saffron syrup soak — singhal is dry, crunchy, and mildly sweet. Made for Navratri, Diwali, and village fairs across Garhwal.

Ingredients
| 1 cup | semolina |
| 1 cup | sugar |
| 1 cup | milk |
| 2 tablespoons | ghee |
| 1 teaspoon | baking powder |
| 1 | ripe banana |
| 1 teaspoon | cardamom powder |
| 1 pinch | salt |
| as needed | ghee for frying |
Instructions
- 1 Mash the banana in a bowl until smooth.
- 2 Add semolina, sugar, milk, ghee, baking powder, cardamom powder, and salt to the mashed banana.
- 3 Mix well to form a smooth batter and let it rest for 15-20 minutes.
- 4 Heat ghee in a pan over medium heat.
- 5 Pour a ladleful of batter into the pan and spread it slightly to form a small pancake.
- 6 Cook until golden brown on one side, then flip and cook the other side.
- 7 Repeat with the remaining batter.
- 8 Serve warm.
Tips
Ensure the batter is of pouring consistency. Adjust milk if needed.
