Ingredients

500 grams sohiong berries
1 cup sugar
2 cups water
1 teaspoon lemon juice

  1. 1 Wash the sohiong berries thoroughly to remove any dirt or impurities.
  2. 2 In a large pot, combine the washed sohiong berries and water.
  3. 3 Bring the mixture to a boil over medium heat, then reduce the heat and let it simmer for about 20 minutes until the berries are soft and have released their juice.
  4. 4 Strain the mixture through a fine sieve or cheesecloth to extract the juice, discarding the solids.
  5. 5 Return the extracted juice to the pot and add the sugar.
  6. 6 Stir the mixture over low heat until the sugar has completely dissolved.
  7. 7 Increase the heat and bring the mixture to a gentle boil, allowing it to thicken slightly for about 10-15 minutes.
  8. 8 Add the lemon juice and stir well. This helps to preserve the syrup and balance the sweetness.
  9. 9 Remove the syrup from heat and let it cool completely.
  10. 10 Once cooled, transfer the syrup to a clean, airtight bottle for storage.
