Ingredients
| 500 grams | pork belly |
| 1 tablespoon | mustard oil |
| 1 large | onion, sliced |
| 4 cloves | garlic, minced |
| 1 inch | ginger, minced |
| 3 pieces | green chilies, slit |
| 1 teaspoon | turmeric powder |
| 1 teaspoon | red chili powder |
| 2 cups | water |
| 1 teaspoon | salt |
| 1 teaspoon | black pepper powder |
| 1 handful | fresh coriander leaves, chopped |
Instructions
- 1 Heat mustard oil in a pot over medium heat.
- 2 Add sliced onions and sauté until they turn golden brown.
- 3 Add minced garlic, ginger, and green chilies. Sauté for another 2 minutes.
- 4 Add the pork belly pieces and fry until they are browned on all sides.
- 5 Sprinkle turmeric powder and red chili powder over the pork. Mix well to coat the pork evenly with the spices.
- 6 Pour in the water and add salt. Stir to combine.
- 7 Bring the stew to a boil, then reduce the heat to low. Cover and simmer for about 30 minutes or until the pork is tender.
- 8 Add black pepper powder and adjust salt if necessary.
- 9 Garnish with fresh coriander leaves before serving.
Tips
For a richer flavor, let the stew simmer longer. Adjust the spice levels according to your taste.
