Ingredients

500 grams pork belly
1 tablespoon mustard oil
1 large onion, sliced
4 cloves garlic, minced
1 inch ginger, minced
3 pieces green chilies, slit
1 teaspoon turmeric powder
1 teaspoon red chili powder
2 cups water
1 teaspoon salt
1 teaspoon black pepper powder
1 handful fresh coriander leaves, chopped

Instructions

  1. 1 Heat mustard oil in a pot over medium heat.
  2. 2 Add sliced onions and sauté until they turn golden brown.
  3. 3 Add minced garlic, ginger, and green chilies. Sauté for another 2 minutes.
  4. 4 Add the pork belly pieces and fry until they are browned on all sides.
  5. 5 Sprinkle turmeric powder and red chili powder over the pork. Mix well to coat the pork evenly with the spices.
  6. 6 Pour in the water and add salt. Stir to combine.
  7. 7 Bring the stew to a boil, then reduce the heat to low. Cover and simmer for about 30 minutes or until the pork is tender.
  8. 8 Add black pepper powder and adjust salt if necessary.
  9. 9 Garnish with fresh coriander leaves before serving.

Tips

For a richer flavor, let the stew simmer longer. Adjust the spice levels according to your taste.
