Ingredients
| 1 cup | soibum (fermented bamboo shoots) |
| 2 medium | potatoes |
| 4-5 | dried red chilies |
| 1 teaspoon | fermented fish (ngari) |
| 1 tablespoon | mustard oil |
| — | salt to taste |
| — | fresh coriander leaves for garnish |
Instructions
- 1 Peel and cut the potatoes into medium-sized cubes.
- 2 Boil the potatoes in a pot of water until they are tender. Drain and set aside.
- 3 In a separate pan, dry roast the dried red chilies until they are fragrant.
- 4 Grind the roasted chilies into a coarse powder using a mortar and pestle or a spice grinder.
- 5 In a mixing bowl, combine the boiled potatoes, soibum, ground chilies, and fermented fish.
- 6 Add salt to taste and mix everything thoroughly, mashing the potatoes slightly.
- 7 Heat mustard oil in a small pan until it is smoking hot, then pour it over the mixture.
- 8 Mix everything well to incorporate the flavors.
- 9 Garnish with fresh coriander leaves before serving.
Tips
Adjust the amount of dried red chilies based on your spice preference.
