A variation of the traditional eromba made with fermented bamboo shoots, mashed with boiled vegetables and chillies. It's a tangy and spicy dish served as a side.

Ingredients

1 cup soibum (fermented bamboo shoots)
2 medium potatoes
4-5 dried red chilies
1 teaspoon fermented fish (ngari)
1 tablespoon mustard oil
salt to taste
fresh coriander leaves for garnish

Instructions

  1. 1 Peel and cut the potatoes into medium-sized cubes.
  2. 2 Boil the potatoes in a pot of water until they are tender. Drain and set aside.
  3. 3 In a separate pan, dry roast the dried red chilies until they are fragrant.
  4. 4 Grind the roasted chilies into a coarse powder using a mortar and pestle or a spice grinder.
  5. 5 In a mixing bowl, combine the boiled potatoes, soibum, ground chilies, and fermented fish.
  6. 6 Add salt to taste and mix everything thoroughly, mashing the potatoes slightly.
  7. 7 Heat mustard oil in a small pan until it is smoking hot, then pour it over the mixture.
  8. 8 Mix everything well to incorporate the flavors.
  9. 9 Garnish with fresh coriander leaves before serving.

Tips

Adjust the amount of dried red chilies based on your spice preference.
