Ingredients
| 2 cups | mixed greens (spinach, fenugreek, amaranth) |
| 1 tablespoon | oil |
| 1 teaspoon | mustard seeds |
| 1 teaspoon | cumin seeds |
| 2 | dry red chilies |
| 1 pinch | asafoetida |
| 1 medium | onion, finely chopped |
| 1 teaspoon | turmeric powder |
| 1 teaspoon | chili powder |
| 1 tablespoon | grated coconut |
| 1 teaspoon | jaggery |
| — | salt to taste |
Instructions
- 1 Wash and finely chop the mixed greens.
- 2 Heat oil in a pan over medium heat.
- 3 Add mustard seeds and allow them to splutter.
- 4 Add cumin seeds, dry red chilies, and asafoetida.
- 5 Add the chopped onion and sauté until translucent.
- 6 Stir in the turmeric powder and chili powder.
- 7 Add the chopped greens and sauté for a few minutes until they wilt.
- 8 Mix in the grated coconut and jaggery.
- 9 Season with salt to taste and cook for another 5 minutes.
- 10 Serve hot with rice or roti.
Tips
Adjust the amount of jaggery to balance the bitterness of the greens.
