Ingredients

2 cups mixed greens (spinach, fenugreek, amaranth)
1 tablespoon oil
1 teaspoon mustard seeds
1 teaspoon cumin seeds
2 dry red chilies
1 pinch asafoetida
1 medium onion, finely chopped
1 teaspoon turmeric powder
1 teaspoon chili powder
1 tablespoon grated coconut
1 teaspoon jaggery
salt to taste

Instructions

  1. 1 Wash and finely chop the mixed greens.
  2. 2 Heat oil in a pan over medium heat.
  3. 3 Add mustard seeds and allow them to splutter.
  4. 4 Add cumin seeds, dry red chilies, and asafoetida.
  5. 5 Add the chopped onion and sauté until translucent.
  6. 6 Stir in the turmeric powder and chili powder.
  7. 7 Add the chopped greens and sauté for a few minutes until they wilt.
  8. 8 Mix in the grated coconut and jaggery.
  9. 9 Season with salt to taste and cook for another 5 minutes.
  10. 10 Serve hot with rice or roti.

Tips

Adjust the amount of jaggery to balance the bitterness of the greens.
