Ingredients

2 cups mixed greens (spinach, amaranth, fenugreek leaves)
1 tablespoon oil
1 teaspoon mustard seeds
1 teaspoon urad dal
1 teaspoon chana dal
2 dried red chilies
1 pinch asafoetida
1 medium onion, finely chopped
1 teaspoon turmeric powder
1 salt to taste
2 tablespoons grated coconut
1 teaspoon jaggery

Instructions

  1. 1 Wash the mixed greens thoroughly and chop them finely.
  2. 2 Heat oil in a pan over medium heat.
  3. 3 Add mustard seeds and let them splutter.
  4. 4 Add urad dal, chana dal, and dried red chilies. Fry until the dals turn golden brown.
  5. 5 Add a pinch of asafoetida and the chopped onion. Sauté until the onion becomes translucent.
  6. 6 Stir in the turmeric powder and the chopped greens.
  7. 7 Add salt to taste and cook the greens until they are wilted and tender.
  8. 8 Mix in the grated coconut and jaggery, and cook for another 2-3 minutes.
  9. 9 Serve hot as a side dish with rice or chapati.

Tips

Ensure the greens are dry after washing to avoid excess water in the dish.
