Ingredients
| 2 cups | mixed greens (spinach, amaranth, fenugreek leaves) |
| 1 tablespoon | oil |
| 1 teaspoon | mustard seeds |
| 1 teaspoon | urad dal |
| 1 teaspoon | chana dal |
| 2 | dried red chilies |
| 1 pinch | asafoetida |
| 1 medium | onion, finely chopped |
| 1 teaspoon | turmeric powder |
| 1 | salt to taste |
| 2 tablespoons | grated coconut |
| 1 teaspoon | jaggery |
Instructions
- 1 Wash the mixed greens thoroughly and chop them finely.
- 2 Heat oil in a pan over medium heat.
- 3 Add mustard seeds and let them splutter.
- 4 Add urad dal, chana dal, and dried red chilies. Fry until the dals turn golden brown.
- 5 Add a pinch of asafoetida and the chopped onion. Sauté until the onion becomes translucent.
- 6 Stir in the turmeric powder and the chopped greens.
- 7 Add salt to taste and cook the greens until they are wilted and tender.
- 8 Mix in the grated coconut and jaggery, and cook for another 2-3 minutes.
- 9 Serve hot as a side dish with rice or chapati.
Tips
Ensure the greens are dry after washing to avoid excess water in the dish.
