2 tablespoons | Oil |

1 teaspoon | Mustard Seed |
|
1 teaspoon | Cumin , seeds |
|
1 pinch | Asafoetida |
|
8-10 | Curry Leaf |
|
2 tablespoons | Cilantro , chopped fresh |
|
1 teaspoon | Turmeric powder |
|
2 teaspoons | Red chili powder |
|
1 | Chili , green, finely chopped |
|
1 teaspoon | Sugar |
|
— | Salt , to taste |
Instructions
- 1 Peel and dice the potatoes into small cubes.
- 2 Heat oil in a pan over medium heat.
- 3 Add mustard seeds and let them splutter.
- 4 Add cumin seeds, asafoetida, and curry leaves. Sauté for a few seconds.
- 5 Add the chopped green chili and sauté for another minute.
- 6 Add the diced potatoes to the pan and stir well.
- 7 Sprinkle turmeric powder, red chili powder, and salt over the potatoes. Mix everything thoroughly.
- 8 Cover the pan with a lid and cook on low heat for about 10-12 minutes or until the potatoes are tender, stirring occasionally.
- 9 Add sugar and mix well.
- 10 Garnish with chopped fresh coriander and serve hot.
Tips
For a variation, you can add a handful of roasted peanuts for extra crunch.
