Ingredients

3 medium potatoes
2 tablespoons oil
1 teaspoon mustard seeds
1 teaspoon cumin seeds
1 pinch asafoetida
8-10 curry leaves
2 tablespoons chopped fresh coriander
1 teaspoon turmeric powder
2 teaspoons red chili powder
1 green chili, finely chopped
1 teaspoon sugar
salt to taste

Instructions

  1. 1 Peel and dice the potatoes into small cubes.
  2. 2 Heat oil in a pan over medium heat.
  3. 3 Add mustard seeds and let them splutter.
  4. 4 Add cumin seeds, asafoetida, and curry leaves. Sauté for a few seconds.
  5. 5 Add the chopped green chili and sauté for another minute.
  6. 6 Add the diced potatoes to the pan and stir well.
  7. 7 Sprinkle turmeric powder, red chili powder, and salt over the potatoes. Mix everything thoroughly.
  8. 8 Cover the pan with a lid and cook on low heat for about 10-12 minutes or until the potatoes are tender, stirring occasionally.
  9. 9 Add sugar and mix well.
  10. 10 Garnish with chopped fresh coriander and serve hot.

Tips

For a variation, you can add a handful of roasted peanuts for extra crunch.
