Ingredients
| 200 grams | dried fish (sukhua) |
| 2 tablespoons | mustard oil |
| 1 medium | onion, finely chopped |
| 2 cloves | garlic, finely chopped |
| 1 teaspoon | turmeric powder |
| 1 teaspoon | red chili powder |
| — | salt to taste |
| 1 | green chili, slit |
| 2 tablespoons | fresh coriander leaves, chopped |
Instructions
- 1 Clean the dried fish thoroughly by rinsing it under running water to remove any dirt or impurities.
- 2 Heat mustard oil in a pan over medium heat until it starts to smoke slightly.
- 3 Add the chopped onions and sauté until they turn golden brown.
- 4 Add the chopped garlic and sauté for another minute until the raw smell disappears.
- 5 Add the cleaned dried fish to the pan and stir well.
- 6 Sprinkle turmeric powder, red chili powder, and salt over the fish and mix everything thoroughly.
- 7 Cook the fish on medium heat, stirring occasionally, until it becomes crispy and golden brown.
- 8 Add the slit green chili and sauté for another minute.
- 9 Garnish with freshly chopped coriander leaves before serving.

Ensure the dried fish is thoroughly cleaned to remove any sand or impurities. Adjust the amount of chili according to your spice preference.
