Ingredients
| 250 grams | suran (yam), peeled and diced |
| 2 tablespoons | coconut oil |
| 1 teaspoon | mustard seeds |
| 1 teaspoon | cumin seeds |
| 1 pinch | asafoetida |
| 1 medium | onion, finely chopped |
| 2 teaspoons | ginger-garlic paste |
| 2 teaspoons | red chili powder |
| 1 teaspoon | turmeric powder |
| 1 teaspoon | coriander powder |
| 1 cup | freshly grated coconut |
| 1 tablespoon | tamarind pulp |
| salt | to taste |
| 2 tablespoons | fresh coriander leaves, chopped |
Instructions
- 1 Heat coconut oil in a pan over medium heat.
- 2 Add mustard seeds and let them splutter.
- 3 Add cumin seeds and asafoetida, sauté for a few seconds.
- 4 Add chopped onions and sauté until they turn translucent.
- 5 Stir in the ginger-garlic paste and sauté until the raw smell disappears.
- 6 Add diced suran and mix well.
- 7 Add red chili powder, turmeric powder, coriander powder, and salt. Stir to coat the suran with spices.
- 8 Cover and cook for 10-15 minutes, stirring occasionally, until the suran is tender.
- 9 Add freshly grated coconut and tamarind pulp, mix well and cook for another 5 minutes.
- 10 Garnish with chopped coriander leaves before serving.
Tips
Ensure the suran is cooked thoroughly to avoid any itchiness. Adjust the spice level according to your preference.
