Ingredients

250 grams suran (yam), peeled and diced
2 tablespoons coconut oil
1 teaspoon mustard seeds
1 teaspoon cumin seeds
1 pinch asafoetida
1 medium onion, finely chopped
2 teaspoons ginger-garlic paste
2 teaspoons red chili powder
1 teaspoon turmeric powder
1 teaspoon coriander powder
1 cup freshly grated coconut
1 tablespoon tamarind pulp
salt to taste
2 tablespoons fresh coriander leaves, chopped

Instructions

  1. 1 Heat coconut oil in a pan over medium heat.
  2. 2 Add mustard seeds and let them splutter.
  3. 3 Add cumin seeds and asafoetida, sauté for a few seconds.
  4. 4 Add chopped onions and sauté until they turn translucent.
  5. 5 Stir in the ginger-garlic paste and sauté until the raw smell disappears.
  6. 6 Add diced suran and mix well.
  7. 7 Add red chili powder, turmeric powder, coriander powder, and salt. Stir to coat the suran with spices.
  8. 8 Cover and cook for 10-15 minutes, stirring occasionally, until the suran is tender.
  9. 9 Add freshly grated coconut and tamarind pulp, mix well and cook for another 5 minutes.
  10. 10 Garnish with chopped coriander leaves before serving.

Tips

Ensure the suran is cooked thoroughly to avoid any itchiness. Adjust the spice level according to your preference.
