Ingredients

250 grams Surati papdi (flat beans)
2 tablespoons oil
1 teaspoon mustard seeds
1 teaspoon cumin seeds
1 pinch asafoetida (hing)
1 teaspoon turmeric powder
1 teaspoon red chili powder
1 teaspoon coriander powder
1 teaspoon cumin powder
2 tablespoons grated coconut
1 tablespoon sugar
1 tablespoon lemon juice
1 green chili, finely chopped
1 medium-sized potato, diced
salt to taste
2 tablespoons fresh coriander leaves, chopped

Instructions

  1. 1 Wash the Surati papdi thoroughly and remove the strings from the sides. Cut them into 1-inch pieces.
  2. 2 Heat oil in a pan over medium heat. Add mustard seeds and let them splutter.
  3. 3 Add cumin seeds and a pinch of asafoetida. Sauté for a few seconds.
  4. 4 Add the chopped green chili and diced potato. Sauté for 2-3 minutes.
  5. 5 Add the turmeric powder, red chili powder, coriander powder, and cumin powder. Mix well.
  6. 6 Add the Surati papdi pieces and sauté for another 2 minutes.
  7. 7 Add salt and 1/4 cup of water. Cover and cook on low heat for 10-12 minutes, stirring occasionally.
  8. 8 Once the vegetables are cooked, add grated coconut, sugar, and lemon juice. Mix well and cook for another 2 minutes.
  9. 9 Garnish with chopped coriander leaves and serve hot.

Tips

Adjust the amount of sugar and lemon juice according to your taste preference.
