Ingredients
| 250 grams | Surati papdi (flat beans) |
| 2 tablespoons | oil |
| 1 teaspoon | mustard seeds |
| 1 teaspoon | cumin seeds |
| 1 pinch | asafoetida (hing) |
| 1 teaspoon | turmeric powder |
| 1 teaspoon | red chili powder |
| 1 teaspoon | coriander powder |
| 1 teaspoon | cumin powder |
| 2 tablespoons | grated coconut |
| 1 tablespoon | sugar |
| 1 tablespoon | lemon juice |
| 1 | green chili, finely chopped |
| 1 | medium-sized potato, diced |
| — | salt to taste |
| 2 tablespoons | fresh coriander leaves, chopped |
Instructions
- 1 Wash the Surati papdi thoroughly and remove the strings from the sides. Cut them into 1-inch pieces.
- 2 Heat oil in a pan over medium heat. Add mustard seeds and let them splutter.
- 3 Add cumin seeds and a pinch of asafoetida. Sauté for a few seconds.
- 4 Add the chopped green chili and diced potato. Sauté for 2-3 minutes.
- 5 Add the turmeric powder, red chili powder, coriander powder, and cumin powder. Mix well.
- 6 Add the Surati papdi pieces and sauté for another 2 minutes.
- 7 Add salt and 1/4 cup of water. Cover and cook on low heat for 10-12 minutes, stirring occasionally.
- 8 Once the vegetables are cooked, add grated coconut, sugar, and lemon juice. Mix well and cook for another 2 minutes.
- 9 Garnish with chopped coriander leaves and serve hot.
Tips
Adjust the amount of sugar and lemon juice according to your taste preference.
