Ingredients

Tomato 3 Tomato , medium-sized
Onion 1 Onion , medium-sized, finely chopped
Chili 2 Chili , finely chopped
Garlic 2 cloves Garlic , minced
Ginger 1 inch Ginger , grated
mustard oil 2 tablespoons Mustard oil
salt Salt , to taste
Cilantro Cilantro , chopped

Instructions

  1. 1 Roast the tomatoes over an open flame or in a hot oven until the skin is charred and the flesh is soft.
  2. 2 Allow the roasted tomatoes to cool slightly, then peel off the charred skin.
  3. 3 In a mixing bowl, mash the peeled tomatoes using your hands or a fork.
  4. 4 Add the finely chopped onion, green chilies, minced garlic, and grated ginger to the mashed tomatoes.
  5. 5 Pour in the mustard oil and mix everything thoroughly.
  6. 6 Season the mixture with salt to taste.
  7. 7 Garnish with freshly chopped coriander leaves before serving.

Tips

Roasting the tomatoes over an open flame gives a smoky flavor that enhances the dish.
