Ingredients
| 3 | medium-sized tomatoes |
| 1 | medium-sized onion, finely chopped |
| 2 | green chilies, finely chopped |
| 2 cloves | garlic, minced |
| 1 inch | ginger, grated |
| 2 tablespoons | mustard oil |
| — | salt to taste |
| — | fresh coriander leaves, chopped |
Instructions
- 1 Roast the tomatoes over an open flame or in a hot oven until the skin is charred and the flesh is soft.
- 2 Allow the roasted tomatoes to cool slightly, then peel off the charred skin.
- 3 In a mixing bowl, mash the peeled tomatoes using your hands or a fork.
- 4 Add the finely chopped onion, green chilies, minced garlic, and grated ginger to the mashed tomatoes.
- 5 Pour in the mustard oil and mix everything thoroughly.
- 6 Season the mixture with salt to taste.
- 7 Garnish with freshly chopped coriander leaves before serving.
Tips
Roasting the tomatoes over an open flame gives a smoky flavor that enhances the dish.
