500 grams | Mutton , bone-in |

2 tablespoons | Oil |

2 cups | Water |
|
1 cup | Onion , finely chopped |
|
1 tablespoon | Ginger-garlic paste |
|
1 teaspoon | Turmeric powder |
|
2 tablespoons | Red chili powder |
|
1 teaspoon | Coriander powder |
|
1 teaspoon | Cumin , powder |
|
1 teaspoon | Garam masala |
|
1 teaspoon | Black pepper powder |
|
2 tablespoons | Cilantro , fresh, chopped |

Instructions
- 1 Heat oil in a pressure cooker over medium heat.
- 2 Add chopped onions and sauté until golden brown.
- 3 Add ginger-garlic paste and sauté for another 2 minutes.
- 4 Add the mutton pieces and cook until they are browned on all sides.
- 5 Add turmeric powder, red chili powder, coriander powder, cumin powder, and salt. Mix well.
- 6 Pour in 2 cups of water and stir to combine.
- 7 Close the lid of the pressure cooker and cook for 3-4 whistles or until the mutton is tender.
- 8 Once the pressure releases, open the lid and add garam masala and black pepper powder.
- 9 Simmer for another 5-10 minutes to thicken the gravy.
- 10 Garnish with fresh coriander and serve hot.
Tips
For a richer flavor, you can add a few whole spices like bay leaf, cinnamon, and cloves while sautéing the onions.
