Ingredients

1 cup | Poha , thick |
|
1 cup | Onion , chopped |
|
1 cup | Potato , boiled, cubed |
|
2 tablespoons | Oil |
|
1 teaspoon | Mustard Seed |
|
1 teaspoon | Turmeric powder |
|
1 teaspoon | Sugar |
|
1 tablespoon | Lemon juice |
|
2 tablespoons | Cilantro , chopped |
|
— | Salt , to taste |
|
1 cup | Sev , for garnish |
Instructions
- 1 Rinse the poha under running water until it softens, then drain and set aside.
- 2 Heat oil in a pan and add mustard seeds. Allow them to splutter.
- 3 Add chopped onions and sauté until they turn translucent.
- 4 Stir in the turmeric powder and mix well.
- 5 Add the boiled potato cubes and sauté for a couple of minutes.
- 6 Add the softened poha, salt, and sugar. Mix gently to combine all ingredients.
- 7 Cook for 2-3 minutes on low heat, ensuring the poha is heated through.
- 8 Turn off the heat and add lemon juice and chopped coriander leaves. Mix well.
- 9 Serve the poha hot, garnished with sev on top.
Tips
For an authentic taste, you can add roasted peanuts to the poha for extra crunch.
