Ingredients

2 cups glutinous rice
1 cup grated coconut
1/2 cup jaggery
1/4 teaspoon cardamom powder
1/4 teaspoon salt
1 cup water

Instructions

  1. 1 Wash and soak the glutinous rice for 4-5 hours or overnight.
  2. 2 Drain the rice and grind it into a fine paste using a little water.
  3. 3 In a bowl, mix the grated coconut, jaggery, and cardamom powder to make the filling.
  4. 4 Add a pinch of salt to the rice paste and mix well.
  5. 5 Grease small bowls or cups lightly with oil.
  6. 6 Pour a thin layer of rice paste into the bowls.
  7. 7 Add a spoonful of the coconut-jaggery filling on top of the rice paste.
  8. 8 Cover the filling with another layer of rice paste.
  9. 9 Steam the bowls in a steamer for about 20-25 minutes or until the pithas are cooked through.
  10. 10 Remove from the steamer and let them cool slightly before serving.

Tips

Ensure the rice paste is smooth for the best texture. Adjust the sweetness of the filling to taste.
