Ingredients
| 2 cups | glutinous rice |
| 1 cup | grated coconut |
| 1/2 cup | jaggery |
| 1/4 teaspoon | cardamom powder |
| 1/4 teaspoon | salt |
| 1 cup | water |
Instructions
- 1 Wash and soak the glutinous rice for 4-5 hours or overnight.
- 2 Drain the rice and grind it into a fine paste using a little water.
- 3 In a bowl, mix the grated coconut, jaggery, and cardamom powder to make the filling.
- 4 Add a pinch of salt to the rice paste and mix well.
- 5 Grease small bowls or cups lightly with oil.
- 6 Pour a thin layer of rice paste into the bowls.
- 7 Add a spoonful of the coconut-jaggery filling on top of the rice paste.
- 8 Cover the filling with another layer of rice paste.
- 9 Steam the bowls in a steamer for about 20-25 minutes or until the pithas are cooked through.
- 10 Remove from the steamer and let them cool slightly before serving.
Tips
Ensure the rice paste is smooth for the best texture. Adjust the sweetness of the filling to taste.
