| 1 cup | coconut milk |
| 2 tablespoons | red curry paste |
| 2 tablespoons | fish sauce |
| 1 tablespoon | palm sugar |
| 1 tablespoon | ground turmeric |
| 1 teaspoon | ground coriander |
| 1 teaspoon | ground cumin |
| 2 tablespoons | vegetable oil |
| 1 cup | peanut sauce for serving |
| — | bamboo skewers, soaked in water |
Instructions
- 1 In a bowl, combine coconut milk, red curry paste, fish sauce, palm sugar, turmeric, coriander, cumin, and vegetable oil to create a marinade.
- 2 Add the chicken strips to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour, or overnight for best results.
- 3 Preheat a grill or grill pan over medium-high heat.
- 4 Thread the marinated chicken strips onto the soaked bamboo skewers.
- 5 Grill the chicken skewers for about 5-7 minutes on each side, or until fully cooked and slightly charred.
- 6 Serve the satay with peanut sauce on the side for dipping.
Tips
For added flavor, you can baste the chicken with leftover marinade while grilling.
