Ingredients

500 grams chicken breast, cut into strips
1 cup coconut milk
2 tablespoons red curry paste
2 tablespoons fish sauce
1 tablespoon palm sugar
1 tablespoon ground turmeric
1 teaspoon ground coriander
1 teaspoon ground cumin
2 tablespoons vegetable oil
1 cup peanut sauce for serving
bamboo skewers, soaked in water

Instructions

  1. 1 In a bowl, combine coconut milk, red curry paste, fish sauce, palm sugar, turmeric, coriander, cumin, and vegetable oil to create a marinade.
  2. 2 Add the chicken strips to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour, or overnight for best results.
  3. 3 Preheat a grill or grill pan over medium-high heat.
  4. 4 Thread the marinated chicken strips onto the soaked bamboo skewers.
  5. 5 Grill the chicken skewers for about 5-7 minutes on each side, or until fully cooked and slightly charred.
  6. 6 Serve the satay with peanut sauce on the side for dipping.

Tips

For added flavor, you can baste the chicken with leftover marinade while grilling.
