1/2 cup | Sesame Seed , white |

2 tablespoons | Peanut |
|
2 tablespoons | Coconut , grated |
|
1 teaspoon | Cumin , seeds |
|
2 cloves | Garlic , finely chopped |
|
2 pieces | Green Chili , slit |
|
1 tablespoon | Tamarind , pulp |
|
— | Salt , to taste |
|
1 teaspoon | Sugar |
|
1 tablespoon | Mustard oil |

1/4 cup | Water |
Instructions
- 1 Dry roast the white sesame seeds in a pan over medium heat until they turn golden brown. Set aside to cool.
- 2 In the same pan, dry roast the peanuts until they are golden and aromatic. Allow them to cool.
- 3 In a blender, combine the roasted sesame seeds, peanuts, grated coconut, cumin seeds, garlic cloves, and green chilies.
- 4 Add the tamarind pulp, salt, sugar, and water to the blender.
- 5 Blend the mixture into a smooth paste, adding more water if needed to achieve the desired consistency.
- 6 Transfer the chutney to a bowl and mix in the mustard oil thoroughly.
- 7 Taste and adjust salt or sugar as needed before serving.
Tips
For a richer flavor, you can lightly fry the garlic and green chilies in a bit of oil before blending.
