A simple winter sweet made by binding dry-roasted sesame seeds (til) with melted jaggery (gur) into small rounds or brittle slabs — snapped apart and eaten as a warming snack. Made specifically at Makar Sankranti (Uttarayani in Kumaon), til gur is distributed among families and neighbours as a traditional gift, its warmth believed to counter the cold of the Himalayan winter.

Ingredients
| 1 cup | white sesame seeds |
| 1 cup | jaggery |
| 2 tablespoons | ghee |
| 2 tablespoons | water |
| — | pinch of salt |
Instructions
- 1 Dry roast the sesame seeds in a pan over low heat until they turn golden brown and start to pop. Set aside.
- 2 In the same pan, add ghee and jaggery along with water. Cook on low heat until the jaggery melts completely and forms a smooth syrup.
- 3 Add a pinch of salt to the jaggery syrup and mix well.
- 4 Quickly add the roasted sesame seeds to the jaggery syrup and mix thoroughly to coat the seeds evenly.
- 5 Remove the mixture from heat and let it cool slightly until it is safe to handle.
- 6 Grease your hands with a little ghee and shape the mixture into small balls or ladoos while it is still warm.
- 7 Allow the Til Gur ladoos to cool completely and set before serving.
Tips
Ensure the jaggery syrup is not overcooked, as it will harden quickly. Work quickly when shaping the ladoos.
