Ingredients
| 1 cup | whole wheat flour |
| 1 cup | jaggery |
| 1 cup | sesame seeds |
| 2 tablespoons | ghee |
| 1/4 teaspoon | cardamom powder |
| 1/4 teaspoon | salt |
| as needed | water |
| as needed | oil for cooking |
Instructions
- 1 In a pan, dry roast the sesame seeds on low heat until they are golden and aromatic. Allow them to cool.
- 2 Grind the roasted sesame seeds into a coarse powder using a mixer.
- 3 In a separate pan, melt the jaggery with a little water until it forms a syrup. Add the cardamom powder and mix well.
- 4 Combine the sesame seed powder with the jaggery syrup to form a thick paste. Let this mixture cool.
- 5 In a bowl, mix the whole wheat flour with a pinch of salt and enough water to form a soft dough. Knead well and let it rest for 15 minutes.
- 6 Divide the dough into small balls and flatten each one slightly.
- 7 Take a portion of the sesame-jaggery mixture and place it in the center of the flattened dough.
- 8 Fold the edges of the dough over the filling and seal it. Gently roll it out into a flat disc, being careful not to let the filling spill out.
- 9 Heat a tawa or griddle and cook the rolled poli on both sides, applying a little oil or ghee, until golden brown and cooked through.
- 10 Serve warm with a dollop of ghee on top.
Tips
Ensure the jaggery mixture has cooled before filling to prevent it from leaking during rolling.
