Ingredients

1 cup black gram (urad dal)
1 cup jaggery
1 cup water
1 cup wheat flour
1 teaspoon cardamom powder
1 pinch salt
as needed oil for frying

Instructions

  1. 1 Wash and soak the black gram (urad dal) overnight or for at least 6-8 hours.
  2. 2 Drain the water and grind the soaked dal into a fine paste.
  3. 3 In a pan, add jaggery and water. Heat until the jaggery dissolves completely to form a syrup.
  4. 4 Add the jaggery syrup to the dal paste and mix well.
  5. 5 Add wheat flour, cardamom powder, and a pinch of salt to the mixture and combine thoroughly.
  6. 6 Heat oil in a deep frying pan over medium heat.
  7. 7 Take small portions of the batter and shape them into small balls or discs.
  8. 8 Carefully drop the shaped batter into the hot oil and fry until golden brown and crispy.
  9. 9 Remove the tilori from the oil and drain on paper towels to remove excess oil.
  10. 10 Serve warm or at room temperature.

Tips

Ensure the oil is not too hot to prevent the tilori from burning. Adjust the sweetness by varying the amount of jaggery.
