Ingredients

200 g feta cheese, crumbled
100 g ricotta cheese
1 large egg
1/4 cup fresh dill, chopped
1/4 cup fresh mint, chopped
1/4 teaspoon black pepper
6 sheets phyllo pastry
50 g butter, melted
olive oil for brushing

Instructions

  1. 1 Preheat the oven to 180°C (350°F).
  2. 2 In a bowl, mix the crumbled feta cheese, ricotta cheese, egg, dill, mint, and black pepper until well combined.
  3. 3 Brush a baking dish with olive oil.
  4. 4 Place one sheet of phyllo pastry in the dish, allowing the edges to hang over the sides. Brush with melted butter.
  5. 5 Layer two more sheets of phyllo, brushing each with butter.
  6. 6 Spread the cheese mixture evenly over the phyllo layers.
  7. 7 Fold the overhanging edges of phyllo over the filling.
  8. 8 Layer the remaining three sheets of phyllo on top, brushing each with butter.
  9. 9 Tuck in the edges to seal the pie.
  10. 10 Brush the top with more butter and score the top layer into serving pieces with a sharp knife.
  11. 11 Bake in the preheated oven for 30-35 minutes, or until golden brown and crisp.
  12. 12 Allow to cool slightly before serving.

Tips

Ensure the phyllo pastry is covered with a damp cloth while working to prevent it from drying out.
