Ingredients
| 200 g | feta cheese, crumbled |
| 100 g | ricotta cheese |
| 1 large | egg |
| 1/4 cup | fresh dill, chopped |
| 1/4 cup | fresh mint, chopped |
| 1/4 teaspoon | black pepper |
| 6 sheets | phyllo pastry |
| 50 g | butter, melted |
| — | olive oil for brushing |
Instructions
- 1 Preheat the oven to 180°C (350°F).
- 2 In a bowl, mix the crumbled feta cheese, ricotta cheese, egg, dill, mint, and black pepper until well combined.
- 3 Brush a baking dish with olive oil.
- 4 Place one sheet of phyllo pastry in the dish, allowing the edges to hang over the sides. Brush with melted butter.
- 5 Layer two more sheets of phyllo, brushing each with butter.
- 6 Spread the cheese mixture evenly over the phyllo layers.
- 7 Fold the overhanging edges of phyllo over the filling.
- 8 Layer the remaining three sheets of phyllo on top, brushing each with butter.
- 9 Tuck in the edges to seal the pie.
- 10 Brush the top with more butter and score the top layer into serving pieces with a sharp knife.
- 11 Bake in the preheated oven for 30-35 minutes, or until golden brown and crisp.
- 12 Allow to cool slightly before serving.
Tips
Ensure the phyllo pastry is covered with a damp cloth while working to prevent it from drying out.
