Ingredients

1 cup granulated sugar
1 1/2 cups water
1/4 cup cornstarch
1/4 cup powdered sugar
1/2 teaspoon lemon juice
1 teaspoon rose water
1/4 teaspoon cream of tartar
1/4 cup chopped pistachios
Food coloring (optional)

Instructions

  1. 1 In a medium saucepan, combine sugar, 1 cup of water, and lemon juice. Stir over medium heat until the sugar dissolves.
  2. 2 Increase the heat and bring to a boil without stirring, until the mixture reaches 240°F (115°C) on a candy thermometer.
  3. 3 In a separate bowl, mix cornstarch, cream of tartar, and the remaining 1/2 cup of water until smooth.
  4. 4 Gradually add the cornstarch mixture to the boiling sugar syrup, stirring continuously.
  5. 5 Reduce the heat to low and cook, stirring frequently, for about 20-25 minutes until the mixture is thick and golden.
  6. 6 Remove from heat and stir in rose water and food coloring, if using.
  7. 7 Pour the mixture into a greased 8x4 inch loaf pan, smoothing the top with a spatula.
  8. 8 Let it cool at room temperature for at least 4 hours or until set.
  9. 9 Mix powdered sugar and chopped pistachios in a shallow bowl.
  10. 10 Cut the set Turkish Delight into small cubes and roll each piece in the powdered sugar and pistachio mixture.
  11. 11 Store in an airtight container at room temperature.

Tips

For a different flavor, you can substitute rose water with orange blossom water.
