Ingredients
| 1 cup | granulated sugar |
| 1 1/2 cups | water |
| 1/4 cup | cornstarch |
| 1/4 cup | powdered sugar |
| 1/2 teaspoon | lemon juice |
| 1 teaspoon | rose water |
| 1/4 teaspoon | cream of tartar |
| 1/4 cup | chopped pistachios |
| — | Food coloring (optional) |
Instructions
- 1 In a medium saucepan, combine sugar, 1 cup of water, and lemon juice. Stir over medium heat until the sugar dissolves.
- 2 Increase the heat and bring to a boil without stirring, until the mixture reaches 240°F (115°C) on a candy thermometer.
- 3 In a separate bowl, mix cornstarch, cream of tartar, and the remaining 1/2 cup of water until smooth.
- 4 Gradually add the cornstarch mixture to the boiling sugar syrup, stirring continuously.
- 5 Reduce the heat to low and cook, stirring frequently, for about 20-25 minutes until the mixture is thick and golden.
- 6 Remove from heat and stir in rose water and food coloring, if using.
- 7 Pour the mixture into a greased 8x4 inch loaf pan, smoothing the top with a spatula.
- 8 Let it cool at room temperature for at least 4 hours or until set.
- 9 Mix powdered sugar and chopped pistachios in a shallow bowl.
- 10 Cut the set Turkish Delight into small cubes and roll each piece in the powdered sugar and pistachio mixture.
- 11 Store in an airtight container at room temperature.
Tips
For a different flavor, you can substitute rose water with orange blossom water.
