Ingredients
| 2 cups | all-purpose flour |
| 1 teaspoon | salt |
| 1 teaspoon | sugar |
| 1 teaspoon | instant yeast |
| 3/4 cup | warm water |
| 2 tablespoons | olive oil |
| 200 grams | ground beef |
| 1 small | onion, finely chopped |
| 1 small | tomato, finely chopped |
| 1 tablespoon | tomato paste |
| 1 teaspoon | red pepper flakes |
| 1 teaspoon | ground cumin |
| — | salt and pepper to taste |
| 1 | egg yolk, for brushing |
Instructions
- 1 In a large bowl, combine the flour, salt, sugar, and yeast.
- 2 Gradually add the warm water and olive oil, mixing until a soft dough forms.
- 3 Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
- 4 Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.
- 5 Preheat the oven to 220°C (430°F).
- 6 In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
- 7 Add the chopped onion and cook until softened.
- 8 Stir in the chopped tomato, tomato paste, red pepper flakes, cumin, salt, and pepper. Cook for another 5 minutes.
- 9 Punch down the risen dough and divide it into two equal portions.
- 10 Roll each portion into an oval shape about 1/4 inch thick.
- 11 Spread the meat mixture evenly over each oval, leaving a small border around the edges.
- 12 Fold the edges over slightly to create a border and pinch the ends to form a boat shape.
- 13 Brush the edges with egg yolk.
- 14 Place the pide on a baking sheet lined with parchment paper and bake for 15-20 minutes, or until the edges are golden brown.
- 15 Serve warm.
Tips
For a vegetarian option, substitute the ground beef with a mixture of spinach and feta cheese.
