Ingredients
| 1 cup | long-grain rice |
| 2 tablespoons | butter |
| 1 tablespoon | olive oil |
| 1 small | onion, finely chopped |
| 2 cups | chicken or vegetable broth |
| 1 teaspoon | salt |
| 1/2 teaspoon | black pepper |
| 1/4 cup | orzo or vermicelli pasta |
| — | fresh parsley, chopped (optional) |
Instructions
- 1 Rinse the rice under cold water until the water runs clear to remove excess starch.
- 2 In a medium pot, melt the butter with the olive oil over medium heat.
- 3 Add the chopped onion and sauté until translucent, about 3-4 minutes.
- 4 Stir in the orzo or vermicelli pasta and cook until golden brown, stirring frequently.
- 5 Add the rinsed rice to the pot and stir to coat the rice with the butter and oil.
- 6 Pour in the chicken or vegetable broth, and add salt and black pepper.
- 7 Bring the mixture to a boil, then reduce the heat to low, cover the pot, and simmer for about 15-20 minutes until the liquid is absorbed and the rice is tender.
- 8 Remove the pot from heat and let it sit, covered, for 5-10 minutes to allow the rice to steam.
- 9 Fluff the pilav with a fork and garnish with fresh parsley if desired before serving.
Tips
For a richer flavor, you can toast the rice slightly before adding the broth.
