Ingredients

1 cup long-grain rice
2 tablespoons butter
1 tablespoon olive oil
1 small onion, finely chopped
2 cups chicken or vegetable broth
1 teaspoon salt
1/2 teaspoon black pepper
1/4 cup orzo or vermicelli pasta
fresh parsley, chopped (optional)

Instructions

  1. 1 Rinse the rice under cold water until the water runs clear to remove excess starch.
  2. 2 In a medium pot, melt the butter with the olive oil over medium heat.
  3. 3 Add the chopped onion and sauté until translucent, about 3-4 minutes.
  4. 4 Stir in the orzo or vermicelli pasta and cook until golden brown, stirring frequently.
  5. 5 Add the rinsed rice to the pot and stir to coat the rice with the butter and oil.
  6. 6 Pour in the chicken or vegetable broth, and add salt and black pepper.
  7. 7 Bring the mixture to a boil, then reduce the heat to low, cover the pot, and simmer for about 15-20 minutes until the liquid is absorbed and the rice is tender.
  8. 8 Remove the pot from heat and let it sit, covered, for 5-10 minutes to allow the rice to steam.
  9. 9 Fluff the pilav with a fork and garnish with fresh parsley if desired before serving.

Tips

For a richer flavor, you can toast the rice slightly before adding the broth.
