Prep: 15 min Cook: 30 min Total: 45 min 2-3 servings

Ingredients

1 cup dried white peas
1 medium onion, finely chopped
2 medium tomatoes, finely chopped
1 tablespoon ginger-garlic paste
1 teaspoon mustard seeds
1 teaspoon cumin seeds
1 teaspoon red chili powder
1 teaspoon turmeric powder
1 teaspoon garam masala
1 teaspoon coriander powder
1 tablespoon oil
1 cup water
to taste salt
6 pav buns
1 tablespoon fresh coriander leaves, chopped
1 tablespoon lemon juice

Instructions

  1. 1 Rinse the dried white peas thoroughly and soak them in water overnight or for at least 8 hours.
  2. 2 Drain the soaked peas and pressure cook them with 1 cup of water and a pinch of salt for 3-4 whistles or until soft.
  3. 3 Heat oil in a pan over medium heat. Add mustard seeds and cumin seeds, allowing them to splutter.
  4. 4 Add the finely chopped onion and sauté until golden brown.
  5. 5 Stir in the ginger-garlic paste and sauté until the raw smell disappears.
  6. 6 Add the chopped tomatoes and cook until they turn soft and the oil starts to separate.
  7. 7 Mix in the red chili powder, turmeric powder, coriander powder, and salt. Cook for 2 minutes.
  8. 8 Add the cooked peas along with the water from the pressure cooker. Mix well.
  9. 9 Simmer the mixture for 10-15 minutes, allowing the flavors to meld together.
  10. 10 Stir in the garam masala and cook for another 2 minutes.
  11. 11 Garnish with chopped coriander leaves and a squeeze of lemon juice.
  12. 12 Serve hot with pav buns, toasted with a little butter on a pan.

Tips

For a spicier version, add more red chili powder or a few green chilies.
