Bai made with smoked vawksa rep instead of fresh pork — the smoked, dried pork is added to the boiling vegetables and imparts its deeply smoky, concentrated flavour into the greens and broth. A richer, more intensely flavoured version of bai, made when fresh pork is unavailable or when a stronger-tasting stew is wanted.

Ingredients

Pork 250 grams Pork , cut into cubes
Mustard Green 1 cup Mustard Green , chopped
Spinach 1 cup Spinach , chopped
Cabbage 1 cup Cabbage , chopped
Bamboo Shoot 1 cup Bamboo Shoot , sliced
Ginger 1 teaspoon Ginger , minced
Garlic 1 teaspoon Garlic , minced
red chili powder 1 teaspoon Red chili powder
turmeric powder 1 teaspoon Turmeric powder
salt 1 Salt , to taste
water 2 cups Water

Instructions

  1. 1 In a pot, add the pork cubes and water. Bring it to a boil.
  2. 2 Add ginger, garlic, red chili powder, turmeric powder, and salt to the pot.
  3. 3 Simmer for about 20 minutes until the pork is partially cooked.
  4. 4 Add the mustard greens, spinach, cabbage, and bamboo shoot to the pot.
  5. 5 Stir well and continue to simmer for another 15-20 minutes until the pork is tender and the vegetables are cooked.
  6. 6 Adjust salt to taste and serve hot.

Tips

For a more authentic taste, use smoked pork if available.
