Vawksa Rep Bai
Bai made with smoked vawksa rep instead of fresh pork — the smoked, dried pork is added to the boiling vegetables and imparts its deeply smoky, concentrated flavour into the greens and broth. A richer, more intensely flavoured version of bai, made when fresh pork is unavailable or when a stronger-tasting stew is wanted.

Ingredients
| 250 grams | pork, cut into cubes |
| 1 cup | mustard greens, chopped |
| 1 cup | spinach, chopped |
| 1 cup | cabbage, chopped |
| 1 cup | bamboo shoot, sliced |
| 1 teaspoon | ginger, minced |
| 1 teaspoon | garlic, minced |
| 1 teaspoon | red chili powder |
| 1 teaspoon | turmeric powder |
| 1 | salt to taste |
| 2 cups | water |
Instructions
- 1 In a pot, add the pork cubes and water. Bring it to a boil.
- 2 Add ginger, garlic, red chili powder, turmeric powder, and salt to the pot.
- 3 Simmer for about 20 minutes until the pork is partially cooked.
- 4 Add the mustard greens, spinach, cabbage, and bamboo shoot to the pot.
- 5 Stir well and continue to simmer for another 15-20 minutes until the pork is tender and the vegetables are cooked.
- 6 Adjust salt to taste and serve hot.
Tips
For a more authentic taste, use smoked pork if available.
