Bai made with smoked vawksa rep instead of fresh pork — the smoked, dried pork is added to the boiling vegetables and imparts its deeply smoky, concentrated flavour into the greens and broth. A richer, more intensely flavoured version of bai, made when fresh pork is unavailable or when a stronger-tasting stew is wanted.

Ingredients

250 grams pork, cut into cubes
1 cup mustard greens, chopped
1 cup spinach, chopped
1 cup cabbage, chopped
1 cup bamboo shoot, sliced
1 teaspoon ginger, minced
1 teaspoon garlic, minced
1 teaspoon red chili powder
1 teaspoon turmeric powder
1 salt to taste
2 cups water

Instructions

  1. 1 In a pot, add the pork cubes and water. Bring it to a boil.
  2. 2 Add ginger, garlic, red chili powder, turmeric powder, and salt to the pot.
  3. 3 Simmer for about 20 minutes until the pork is partially cooked.
  4. 4 Add the mustard greens, spinach, cabbage, and bamboo shoot to the pot.
  5. 5 Stir well and continue to simmer for another 15-20 minutes until the pork is tender and the vegetables are cooked.
  6. 6 Adjust salt to taste and serve hot.

Tips

For a more authentic taste, use smoked pork if available.
