Ingredients
| 4 | medium potatoes |
| 2 tablespoons | ghee |
| 1 teaspoon | cumin seeds |
| 2 | green chilies, chopped |
| 1 teaspoon | ginger, grated |
| 1 teaspoon | rock salt |
| 1/2 teaspoon | black pepper powder |
| 1 teaspoon | lemon juice |
| 2 tablespoons | fresh coriander leaves, chopped |
Instructions
- 1 Boil the potatoes until they are tender. Once cooked, peel and cube them.
- 2 Heat ghee in a pan over medium heat.
- 3 Add cumin seeds to the hot ghee and let them splutter.
- 4 Add chopped green chilies and grated ginger, sauté for a minute.
- 5 Add the cubed potatoes to the pan and stir well to coat them with the spices.
- 6 Season with rock salt and black pepper powder, mix thoroughly.
- 7 Cook for 5-7 minutes, stirring occasionally, until the potatoes are slightly crispy.
- 8 Add lemon juice and chopped coriander leaves, mix well.
- 9 Serve hot as a fasting dish.
Tips
Ensure the potatoes are not overcooked to maintain their shape during sautéing.
