Ingredients

4 medium potatoes
2 tablespoons ghee
1 teaspoon cumin seeds
2 green chilies, chopped
1 teaspoon ginger, grated
1 teaspoon rock salt
1/2 teaspoon black pepper powder
1 teaspoon lemon juice
2 tablespoons fresh coriander leaves, chopped

Instructions

  1. 1 Boil the potatoes until they are tender. Once cooked, peel and cube them.
  2. 2 Heat ghee in a pan over medium heat.
  3. 3 Add cumin seeds to the hot ghee and let them splutter.
  4. 4 Add chopped green chilies and grated ginger, sauté for a minute.
  5. 5 Add the cubed potatoes to the pan and stir well to coat them with the spices.
  6. 6 Season with rock salt and black pepper powder, mix thoroughly.
  7. 7 Cook for 5-7 minutes, stirring occasionally, until the potatoes are slightly crispy.
  8. 8 Add lemon juice and chopped coriander leaves, mix well.
  9. 9 Serve hot as a fasting dish.

Tips

Ensure the potatoes are not overcooked to maintain their shape during sautéing.
